Caramelized Date and Banana Danishes

Ingredients

Dough

  • 100 g pressed cottage cheese
  • 80 g 2% granulated cottage cheese
  • 90 g flour
  • 1 egg
  • 1/2 tsp baking powder
  • 1 tbsp Sweetener to taste (I added 1 tbsp, or don’t add any at all—the dates will be sweet enough) (or don’t add any at all—the dates will be sweet enough)

Filling

  • 4 tbsp 2% Greek yogurt ((2 tbsp per danish))

Topping

  • 5 Medjool dates
  • 1/2 banana
  • Cinnamon
  • Sea salt
  • Crushed pecans (just a sprinkle)

Directions

    Mix all the dough ingredients together until combined. Place the dough in the fridge or freezer for 5–10 minutes.

    Divide the dough into 2 equal portions. Roll each into a ball, place on parchment paper, and make a well in the center for the filling.

    Add 2 tbsp of Greek yogurt to the center of each danish, making sure it doesn’t overflow.

    Brush the edges with egg yolk.

    Air fry at 260°F for 20 minutes, then increase the temperature to 330°F for another 3–5 minutes, until golden. Let them cool slightly.

    Meanwhile, cook the dates, banana, cinnamon, and a pinch of sea salt over low heat for 5–6 minutes, until caramelized.

    Arrange the caramelized dates and banana on top of the danishes, sprinkle with crushed pecans, and serve.
