Hot Honey Soppressata Pizza

a pizza dough loaded with cottage cheese, mozzarella, bocconcini, soppressata, sun-dried tomatoes, fresh basil, and hot honey.

Ingredients

dough

  • 230 g 2% cottage cheese
  • 120 g all-purpose flour
  • 1 egg
  • ½ tsp baking powder
  • Garlic powder, Parmesan & herb seasoning, and salt (to taste (go easy on the salt—the filling is salty enough!))

filling

  • 30 g light mozzarella, shredded
  • 5 slice bocconcini
  • 7 slice soppressata
  • 2 tsp blended sun-dried tomatoes

to finish

  • Fresh basil
  • hot honey (to taste)

Directions

    Mix all the dough ingredients until combined. The dough will be very sticky.

    Chill the dough in the freezer for 5–10 minutes.

    Generously flour your work surface, then lightly flour your hands and form the dough into a ball. Flour a sheet of parchment paper, place the dough on top, and roll it out directly on the parchment into a large circle. You may need to sprinkle more flour over the dough as you roll so it doesn’t stick to the rolling pin.

    Sprinkle the shredded mozzarella over the base, leaving a 1–2 inch border. Add the bocconcini, soppressata, and dollops of blended sun-dried tomatoes.

    Fold the edges over the filling to create a rustic pizza and brush the crust with egg yolk.

    Air fry at 260°F (127°C) for 18 minutes, then increase to 300°F (149°C) for another 7–8 minutes, or until the crust is golden and crispy.

    Top with fresh basil and drizzle with hot honey to taste.
